And when we give you dubloons how will they be removed from our count?

Records will be kept on each citizen of how many dubloons they earn during the week (this information is taken from Business Reports, much like regular reports written by Guardsmen), and every Sunday these wages will be added to each individual's dubloon balance.
As the plan goes currently, these wages will be announced during the Baron's Court meetings, though the balances will still be written. To answer your second inquiry, you're right. "Dubloon" does sound piratey. The name was actually chosen because Cove is a port town, surrounded by water on almost all sides, and we wanted to emphasize that with the name of the currency. Octiovus, in fact, had a character in BoC with a previous history of piracy, and I would hardly be surprised if other Covians had similar backgrounds.
